Behind the Scenes of a 10ft Vegan Wedding Grazing Table at Post Morrow Foundation- Brookhaven, NY

Let me tell you something about grazing tables — what you don't see is everything that happened before that first guest walked up and grabbed a caprese skewer.

This one was for a wedding at Post Morrow Foundation in Brookhaven, NY, a stunning nature preserve and historic property on Long Island's South Shore. When we arrived we quickly realized this was going to be a full team effort. Nothing was set up and no coordinator on site, just a group of vendors who all looked at each other and without saying a word went into full power mode. Tables got moved, chairs got set up and everyone just did what needed to be done.

Once everything was in place I set up the 10ft grazing table facing outward, right across from the ceremony arch. My thinking? After the ceremony, as guests walked into the tent, the first thing they'd see was this massive, lush, beautiful vegan spread. I was proud of that decision.

Now let me tell you what was on that table, because this is the part I love.

Artisan vegan cheeses including brie, cheddar, camembert/blue, gruyere, pepper jack, a garlic herb cheese spread and a tomato herb fromage. Caprese skewers with vegan mozzarella, cherry tomatoes and fresh basil with mini pipettes of aged balsamic for guests to drizzle themselves. Vegan charcuterie including salami, soppressata and sweet Toscana alongside beet salami and Tuscan slices made from peppers and chickpeas. Housemade dips and spreads including hummus, a housemade veggie dip, a savory almond dip, artichoke spread and pepper jelly. Fresh and dried fruits, olives, cornichons, artisan breads and crackers, plus a dedicated gluten free platter so every single guest was taken care of. Various nuts and edible flowers rounded everything out beautifully.

The table was finished with fresh florals matching the wedding's color palette and lush greenery, because a grazing table should be as beautiful as it is delicious.

And because this couple wanted to go all out, they requested I make handmade bites on a second table- tomato soup shooters with mini grilled cheese sandwiches, sweet potato and avocado tartare, buffalo cauliflower sliders and bruschetta. Custom add-ons like these were available at the time and made for a truly unforgettable spread.

That night they texted me raving, the food was incredible!

That's the part nobody sees in the pretty photos, but it's my favorite part of my work.
